Montefiore has partnered with Memorial Sloan Kettering Cancer Center and Mount Sinai Health System to create New York State’s first proton therapy facility for treating cancer. The $300 million state-of-the-art facility is now open in East Harlem. Proton therapy uses a more precise beam than traditional radiation to target tumors, drastically reducing or even eliminating unnecessary radiation to healthy tissues. “Through our research at the New York Proton Center, we can now explore novel ways to better target and time a form of radiation that spares healthy organs in a way that has never been possible until now,” says Shalom Kalnicki, MD, FACRO, Professor and Chair, Radiation Oncology, and Director, Montefiore Einstein Center for Cancer Care, Montefiore and Einstein.

The new center will be one of the busiest of the 23 Proton Centers in the nation, and an important resource for the New York Metro region, treating a large number of patients from the consortium, including a majority of children with solid tumors.

The Montefiore Center for Orthopedic Specialties, the Montefiore Spine Center and Burke Rehabilitation Hospital’s Outpatient Physical Therapy Program have been brought under one roof at the Musculoskeletal Center, making it easier for the multidisciplinary specialists to collaborate, not only with each other but also with the Center’s patients. Together, specialists from the three centers provide inclusive real-time consultations to develop individualized, coordinated care plans for every patient, with multiple options to address their musculoskeletal needs — all in a single location. The ribbon-cutting ceremony was presided over by Steven M. QUICK TASTY & HEALTHY BBQ CHICKEN DINNER

A delicious healthy dinner al fresco is the perfect way to spend warm summer evenings. BBQ Chicken and Sauce is typically high in sugar and fat, but this recipe only uses a small amount of brown sugar. Also, using boneless breasts reduces the saturated fat while still providing a good source of protein.

Recipes brought to you by Sandra Arévalo, RDN, Director, Nutrition Services and Community Outreach at Montefiore’s Community Pediatrics Program.

BBQ CHICKEN AND SAUCE
Makes 6 servings

1 medium onion, minced
1 large clove garlic, minced
1 Tbsp. Dijon mustard
1 ½ cups ketchup
1 Tbsp. cider vinegar
2 Tbsp. packed brown sugar
2 Tbsp. olive oil
1 tsp. ground chile pepper
Pinch of cayenne
6 skinless, boneless chicken breast halves

Directions:

  1. Make the BBQ Sauce: Place all ingredients, except the chicken, in a large microwave-safe bowl and mix together.
  2. Microwave uncovered on HIGH for 8 minutes, or until bubbling.
  3. Stir and use right away, or cool and refrigerate for up to 1 week or freeze up to 1 month. Makes about 2 cups.
  4. Place chicken in a dish large enough to hold the pieces in one layer. Make sure to leave a little space between pieces.
  5. Measure 1 cup of sauce and spread over chicken to coat pieces. Microwave on HIGH for 17–19 minutes, depending on the chicken’s thickness.
  6. If cooking chicken on a grill, preheat the grill to medium heat. Place the chicken breasts on the grill and cook, covered, for 5–7 minutes. Flip the chicken breasts and cook another 5–7 minutes.
  7. Check if chicken is ready by cutting with a knife. Chicken is well cooked when it is no longer pink in the center and the juice runs clear, or once the internal temperature reached 165 F when measured with a meat thermometer. Serve right away with remaining sauce.
